This isn't just a sandwich. This is a bread grilled experience that feels way fancier than the effort involved. Here's why it works so well every time:

American cheese melts perfectly. It's creamy, smooth, and pulls into those long, satisfying cheese strings that make a melty cheese sandwich feel like pure comfort.
It's genuinely fast. Five minutes of prep, ten minutes of cooking. This easy comfort food sandwich doesn't ask much of you, especially on days when you're running low on energy.
The skillet grilled cheese method gives you full control over browning, so every surface gets that gorgeous golden crust without burning.

Ingredients
Here's everything you need for this crispy garlic butter grilled cheese. Simple list, big results.
Unsalted butter (4 tablespoons, room temperature): This is the base of your garlic butter. Room-temperature butter blends smoothly with the other ingredients and helps the bread grilled surface crisp up evenly in the pan.
Garlic cloves (2, minced): Fresh minced garlic gives this bread grilled cheese its bold, savory punch. It toasts in the butter as the sandwich cooks, mellowing out into something warm and rich.
Pecorino Romano (1 tablespoon, freshly grated): This sharp, salty cheese builds depth into the garlic butter itself. It's a small addition that makes a noticeable difference in the final flavor of your garlic butter grilled cheese.
Fresh Italian parsley (1 tablespoon, chopped): Parsley adds a little brightness and color to the butter. It keeps the bread grilled cheese from feeling too heavy.
Bread (4 slices): Use your favorite sandwich bread. A sturdy white or sourdough works beautifully here because it holds up to the butter and gives you a solid, crispy grilled cheese sandwich.
American cheese (4 slices): Classic, creamy, and melts like a dream. This is the heart of the cheese melt sandwich, giving you that gooey pull with every bite.

Instructions
Short prep, quick cook. Here's how to make this homemade garlic bread sandwich from start to finish.
Prepare skillet: Heat a large skillet over medium heat. Let it warm up fully before adding the sandwiches so you get an even, golden crust on your bread grilled cheese.
Make garlic butter: In a small bowl, combine the softened butter, minced garlic, Pecorino Romano, and chopped parsley. Stir everything together until the mixture is smooth and well blended. This garlic butter is what transforms a regular bread grilled sandwich into something special.
Assemble sandwiches: Spread the garlic butter generously on one side of each bread slice. Place 2 slices of American cheese between 2 slices of bread, making sure the buttered sides face outward toward the pan.
Cook sandwiches: Place both sandwiches in the skillet. Cook for 3 to 4 minutes until the bottom is deep golden brown. You'll start to smell that garlic toasting — that's your cue things are going perfectly.
Flip and finish: Flip each sandwich carefully and cook for another 3 to 4 minutes. The second side should match the first — golden, crispy, and fragrant. The cheese should be fully melted by now, soft and gooey in the center of your bread grilled cheese.
Serve: Cut each sandwich in half and serve right away. This easy sandwich recipe is best hot, straight from the pan.
Substitutions
This best grilled cheese recipe is flexible. A few easy swaps if you need them:
Butter: Salted butter works fine. Just skip any added salt elsewhere. Vegan butter also toasts up nicely if you're dairy-free.
Pecorino Romano: Parmesan is the closest swap and works just as well in the garlic butter. It gives you that same sharp, salty note in the bread grilled sandwich.
American cheese: Provolone, mozzarella, or a sharp cheddar all melt well. Mixing two cheeses gives you extra depth in your melty cheese sandwich.
Parsley: Dried parsley works in a pinch. Fresh basil is another nice option if that's what you have.
Bread: Sourdough, Texas toast, or brioche all make a wonderful garlic butter grilled cheese. Thicker slices hold up better to the butter and give you more surface for crisping.

Storage Tips
This bread grilled cheese is at its best right off the stove. That said, here's what to do with leftovers:
Let the sandwiches cool completely before storing. Wrap them individually in foil and refrigerate for up to 2 days. To reheat, use a skillet over medium-low heat for a few minutes on each side. This brings the crispy grilled cheese texture back far better than a microwave, which tends to make the bread soggy.
Avoid freezing assembled sandwiches as the bread and cheese texture changes significantly after thawing.
Expert Tips
Use room-temperature butter. Cold butter doesn't blend smoothly with the garlic and cheese. Soft butter makes the spread easier to apply and ensures it soaks into the bread evenly for a perfectly crispy grilled cheese sandwich.
Don't rush the heat. Medium heat is your friend here. Too high and the garlic burns before the cheese melts. Medium heat gives you that slow, even golden crust that defines a great skillet grilled cheese.
Press gently while cooking. A light press with your spatula helps the bread make full contact with the pan and encourages that deep golden color on your bread grilled surface.
Add cheese to the outside for extra crunch. For an even crispier result, press a small pinch of the Pecorino Romano directly onto the buttered bread before placing it in the pan. It creates a lacy, cheesy crust on your bread grilled cheese that's hard to resist.
Fresh garlic only. Garlic powder in the butter can work in a pinch, but fresh minced garlic gives you a much more authentic, bold flavor in this homemade garlic bread sandwich.
FAQ
Can you eat grilled cheese with diabetes?
Yes, in moderation. A bread grilled cheese made with lower-sodium cheese, whole grain bread, and a smaller portion can fit into a balanced meal plan. It's always a good idea to chat with your doctor or dietitian about what works best for you. Pairing the sandwich with a salad or soup with vegetables helps round out the meal.
What is the best bread for grilled cheese?
For this garlic bread grilled cheese, a sturdy white sandwich bread, sourdough, or Texas toast works best. Thicker slices hold up to the garlic butter without getting soggy and give you more surface area for that golden, crispy crust. Brioche adds a slightly sweet richness that pairs nicely with the savory garlic butter.
What does Gordon Ramsay put on his grilled cheese?
Gordon Ramsay is known for using a mix of high-quality cheeses and adding extras like Worcestershire sauce or Dijon mustard for depth. Our version keeps it approachable with American cheese and a homemade garlic butter spread that delivers big flavor without any fuss. Sometimes the simplest bread grilled recipe is the one you'll actually make on a weeknight.
Are you supposed to toast bread before making grilled cheese?
No need to pre-toast. In this skillet grilled cheese method, the garlic butter handles all the toasting right in the pan. The butter crisps the outer surface beautifully while the heat melts the cheese from the inside out. Pre-toasting would actually make the bread too dry to absorb the garlic butter properly.
