The first time I made this hibiscus tea strawberry lemonade refresher, I was standing in my kitchen on a sticky July afternoon, desperate for something cold that wasn't loaded with sugar. I steeped some hibiscus tea I'd picked up at the farmers market, tossed in a handful of strawberries, and squeezed half a lemon—and honestly, it tasted better than anything I could've bought.
The deep ruby color alone made me smile, and the tangy-sweet flavor was exactly what I needed. It's surprisingly easy to make, uses ingredients you probably already have, and tastes like a fancy café drink without any of the fuss. Ingredients For Hibiscus Tea Strawberry Lemonade
Here's what goes into this hibiscus tea strawberry lemonade refreshing drink, and why each ingredient matters.
Water: The base for brewing your hibiscus tea. Using filtered water makes a noticeable difference in flavor, especially if your tap water has a strong taste.
Hibiscus tea bags or dried hibiscus flowers: This is what gives the drink its signature tart flavor and gorgeous ruby color. Tea bags are convenient, but dried flowers give you a deeper, more vibrant brew. You can find them at most health food stores or Latin markets.
Strawberries: Fresh strawberries add natural sweetness and a fruity depth that balances the tartness of the hibiscus and lemon. Make sure they're ripe for the best flavor.
Lemon juice, freshly squeezed: Brightens up the whole drink and adds a fresh, citrusy zing. Bottled lemon juice works in a pinch, but fresh really does taste better.
Maple syrup: A natural sweetener that blends smoothly and doesn't overpower the fruit. You can swap in honey or agave if that's what you have, but maple syrup has this subtle richness that I really like here. Start with 2 tablespoons and taste as you go.
Optional toppings: Extra sliced strawberries, lemon slices, and fresh mint leaves make this drink look beautiful and add little bursts of flavor with each sip.

Instructions For Hibiscus Tea Strawberry Lemonade
Brew the hibiscus tea: Bring the water to a boil in your tea kettle, then remove it from the heat. Add the hibiscus tea bags or dried flowers and let them steep for 5 to 7 minutes—longer if you like a stronger, more tart flavor. Remove the tea bags or strain out the flowers, then set the tea aside to cool completely. You can speed this up by putting it in the fridge.
Make the strawberry puree: Wash and slice your strawberries, then toss them into a blender along with about ¼ cup of the cooled hibiscus tea. Blend until smooth. If you want a silky texture without any seeds, strain the puree through a fine mesh sieve or nut milk bag. I usually skip this step because I don't mind the texture, but it's nice if you're serving it to picky eaters.
Assemble the refresher: In a large pitcher, combine the remaining cooled hibiscus tea, strawberry puree, lemon juice, and maple syrup. Stir everything together until it's well mixed. The color should be this vibrant pink-red that looks almost too pretty to drink.
Adjust and serve: Give it a taste and adjust the sweetness or tartness to your liking. If it's too tart, add a bit more maple syrup. If it's too sweet, squeeze in a little more lemon juice. Pour over ice, garnish with lemon slices, fresh strawberries, and mint leaves if you're using them, and serve right away.
Substitutions and Variations
This strawberry lemonade recipe is pretty flexible, so feel free to adjust based on what you have or what you like.
Sweetener options: You can use honey, agave nectar, or even a bit of sugar instead of maple syrup. If you want it sugar-free, try stevia or monk fruit sweetener, but start with less since they're much sweeter.
Fruit swaps: If strawberries aren't in season, try blueberries, raspberries, or even frozen mixed berries. Mango or peach would also be delicious and give you a more tropical vibe.
Make it sparkling: Top off each glass with a splash of sparkling water or club soda for a fizzy version that feels a little more festive.
Add more citrus: A splash of lime juice or orange juice can add another layer of brightness. I've done half lemon and half lime before, and it was really good.
Make it ahead: You can brew the tea and make the strawberry puree a day in advance, then mix everything together right before serving. Just keep them stored separately in the fridge.
Equipment For Hibiscus Tea Strawberry Lemonade
You don't need anything fancy to make this strawberry lemonade drink, just a few basic kitchen tools.
Tea kettle: For boiling water to steep your hibiscus tea. A small pot on the stove works just as well.
Heat-safe container: To steep the tea in. I usually just use a large measuring cup or a teapot.
Blender: For pureeing the strawberries. Any blender works—high-speed, standard, or even an immersion blender if you blend it in a tall cup.
Fine mesh sieve or nut milk bag (optional): If you want a super smooth puree without any seeds or pulp. Totally optional, but nice if you're going for a cleaner texture.
Large pitcher: For mixing and serving. A quart-sized pitcher is perfect for this recipe.
Spoon for stirring: Just to mix everything together once it's in the pitcher.
Storage For Hibiscus Tea Strawberry Lemonade
This strawberry lemonade drink is best served fresh, but you can store leftovers in the fridge for up to 2 days. Keep it in a sealed pitcher or jar, and give it a good stir before pouring since the strawberry puree can settle at the bottom. The flavor will stay vibrant, but it might lose a little bit of that fresh-squeezed brightness after the first day.
I don't recommend freezing the finished drink because the texture gets a little watery when it thaws. But you can freeze leftover strawberry puree in ice cube trays and pop a cube or two into your next batch for extra flavor.
Expert Tips For Hibiscus Tea Strawberry Lemonade
Let the tea cool completely: If you mix hot tea with the other ingredients, it'll melt your ice instantly and dilute the flavor. I usually brew it in the morning and let it chill in the fridge until I'm ready to use it.
Taste as you go: Everyone's sweetness preference is different, so start with 2 tablespoons of maple syrup and adjust from there. You can always add more, but you can't take it out.
Use ripe strawberries: The sweeter and riper your strawberries are, the less sweetener you'll need. If they're underripe or tasteless, the drink won't have that fruity depth.
Don't skip the fresh lemon juice: Bottled lemon juice just doesn't have the same bright, fresh flavor. It only takes a minute to squeeze a lemon, and it makes a noticeable difference.
Strain the puree if serving to kids: Some kids don't like the texture of seeds or pulp, so straining the strawberry lemonade puree makes it smoother and more appealing.
Double the batch for a crowd: This hibiscus tea strawberry lemonade recipe is easy to scale up. Just double or triple everything and mix it in a big pitcher or drink dispenser.
FAQ for Hibiscus Tea Strawberry Lemonade
What flavors pair best with hibiscus?
Hibiscus has a tart, cranberry-like flavor that pairs beautifully with citrus like lemon, lime, and orange. It also goes well with berries, especially strawberries and raspberries, and tropical fruits like mango and pineapple. A little ginger or mint can add a nice kick, too. My favorite pairing is always strawberry and lemon because it balances the tartness perfectly.
What is strawberry hibiscus tea good for?
Strawberry hibiscus tea is refreshing and loaded with antioxidants, which are great for overall health. Hibiscus is known for supporting heart health and may help with blood pressure, while strawberries add vitamin C and natural sweetness. It's also caffeine-free, so it's a nice option any time of day. I make it when I want something flavorful that feels like a treat but isn't full of sugar.
Is hibiscus lemonade good for you?
Yes, hibiscus lemonade can be a healthy choice, especially when it's made with natural sweeteners and fresh ingredients. Hibiscus is rich in antioxidants and has been linked to heart health benefits. Lemon adds vitamin C, and if you use fruit like strawberries, you're getting even more nutrients. Just keep an eye on the sweetener—too much can turn it into more of a dessert drink than a healthy refresher.
What is in Starbucks hibiscus tea lemonade?
Starbucks' version uses their hibiscus tea blend, lemonade, water, and ice. It's sweet and refreshing, but it also has quite a bit of added sugar. This homemade version gives you more control over the sweetness and uses real fruit and fresh lemon juice, so it tastes brighter and more natural. Plus, you can adjust it exactly how you like it without any artificial flavors or preservatives.
